Ingredients

  • 2 cups chicken breast meat, cooked and chopped
  • 1 1/2 cups halved California grapes
  • 1/4 cup pecans, toasted and coarsely chopped
  • 1/2 cup green onions, thinly sliced
  • 1/4 cup celery, chopped
  • 2 tablespoons fresh basil, chopped
  • 1/2 cup light mayonnaise
  • 1 tablespoon lemon juice, fresh
  • 1/4 teaspoon each salt and pepper
  • 12 slices bread, or 6 sandwich rolls
  • 6 lettuce leaves

Directions

Combine all ingredients except bread and lettuce in a medium bowl; mix well. To make sandwiches, place about 3/4 cup salad on 6 bread slices or bottom half of sandwich rolls. Top with lettuce and remaining bread.

Serving Suggestions

Makes 6 sandwiches, or 4 1/2 cups chicken salad.
