DIRECTIONS
1. Make muffin/cake batter with your favorite mix – adding cinnamon and nutmeg.
2. Scoop 2 oz. (wt) or #20 scoop batter into paper muffin cups.
3. Poke 1 grape in the top of each muffin.
4. Bake per manufacturer`s instructions.
1. In a Kitchen Aid or Hobart mixer with paddle attachment, blend cream cheese and margarine at medium speed for about 3-5 minutes, or until fluffy.
2. Turn off the mixer and lower the bowl. Scrape sides and bottom of bowl. Scrape paddle clean.
3. Change the paddle to a whip and then whip for 3 minutes.
4. Add 2 cups powdered sugar.
5. Whip at medium speed for 30 seconds. Repeat previous step for remaining cups of sugar.
6. Turn off mixer, lower bowl and scrape down sides. Add extract. Mix on high speed for 30 seconds.
7. Refrigerate until needed.
1. Using a plastic spatula, smear frosting on Grape Spice Cupcakes.
2. Place one grape on top of each frosted cupcake.
Ingredients
Grape Spice Cupcakes:
5-1/2 lbs. rich cream muffin or cake batter – prepared
1 tablespoon cinnamon, ground
1 tablespoon nutmeg, ground
44 California green seedless grapes
Cream Cheese Frosting:
1 cup cream cheese, softened
1 cup butter or margarine, softened
6 cups powdered sugar
1 tablespoon vanilla extract
Garnish:
