Walnut Sunflower-Crusted Salmon with Honey-Lemon Grapes

DIRECTIONS
Heat oven to 350°F and line a baking sheet with parchment paper or lightly oiled foil. In a medium bowl, whisk together oil, lemon juice, honey, basil, salt, and pepper. Stir in grapes, onion, and arugula; set aside. In a small bowl, stir together walnuts, sunflower seeds, honey, mustard, and salt until a thick paste forms. Place salmon on prepared baking sheet skin side down and press equal amounts of walnut mixture over the surface of each. Bake for 20 minutes or until salmon flakes easily with a fork. Set salmon on plates; using a slotted spoon, spoon marinated grape and onion mixture over salmon and around the plate.

3 cups halved California Grapes
1/2 cup thinly sliced red onion
Small handful of arugula

4 (6-ounce) salmon fillets
